WHere is a home-style interpretation of a drink from the seasonal menu. It's a batch premix which is loaded full of essence of the Christmas time, rendering it excellent for hosting a celebration. Save the extra cordial you can use for morning drinks, desserts, or to mix more rounds of bikinis.
Bikini
Makes enough for 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Put all the components inside a saucepan, bring to a gentle boil, stirring so the sugar melts. Next, turn off the burner and let it to cool fully. Transfer into an sterilised bottle, close it keeping it chilled, it can be stored for around a month.
For the Premix: Pour all the spirits and syrup into one large bottle, allow it to infuse for 60 minutes, then filter it best through a fine cloth, making it fully clarified.
When ready to serve: Add 85ml of your premix into a cocktail shaker containing ice, and agitate lightly for about 60 seconds to cool it down. Filter to a chilled martini glass or equivalent, decorate with some cranberries and finish with a quick spritz of the essential oil over the top.
